What is Blending?

Blending is when two or more substances are combined in specific proportions. Usually, dry ingredients are used in blending. However, one can also blend liquid with certain solids but, there has to be a formula or a proportion so that the final product is not spoilt. Poor blending can cause wet clumps or lead to product settling after they are packed.

How is Blending Done?

Flakes, powders, and granules of various particle sizes and bulk densities are gently blended using blender blades, ensuring minimal contact with the substances.

  • Some examples of dry blends in food manufacturing are –cake mixes, seasonings, flakes, soup mixes, powdered milk products, etc.
  • Wet blends usually have a specific flavor or aroma or other additive solutions that are coated to dry ingredients and some examples of wet blends in food manufacturing are – frozen vegetables, expanded cereals, shredded cheese, etc.

Blending Requirements

Ribbon Blending

The design of a ribbon blender is perfect and highly cost-effective for mixing dry foods such as snack bars, trail mixes, spices, herbs, tea, coffee, cake and muffin mixes, cereals, flour, etc. There are two ribbons in the machine, the inner ribbon of the machine moves the materials towards the ends of the blender, while the outer ribbon moves the materials towards the center, enabling a perfect blend. Small amounts of liquid for coloring or flavoring may be added while blending in ribbon blenders. Liquids are added using spray nozzles to avoid the formation of clumps.

Plow Blending

The food materials are blend in a horizontal cylindrical tank with high-intensity. The speed is so high that the materials are almost weightless within it. There are angled paddles present in the plow blender that keep the materials in constant motion. The particles are airborne in the container and move in different directions in a certain time to achieve the final blend.
